Artisan Honey from the Venice Lagoon: Barena, Acacia, Linden, Blackberry and Wildflower

Our artisan honey from the Venice Lagoon comes from our bees, among salt marshes, vegetable gardens and the blossoms of the lagoon: Barena, Acacia, Linden, Blackberry and our wildflower honeys. Each has its own colour, its own scent and its own season.

Artisan single-flower honey from the Venice Lagoon

Barena honey

Venice lagoon honey: Barena

From the salt marshes (barene) of the Venice lagoon, where from June to September the sea lavender (Limonium vulgare) blooms, the flower we call “fiorella di barena”. A rare and prized honey: dark, with reddish glints, slightly bitter in taste, with a salty aftertaste and mineral notes. Discover everything about Barena honey.

Acacia honey – sold out

Venice lagoon honey: Acacia

Light and delicate, from almost colourless to straw-yellow. It stays liquid for a long time because it is rich in fructose; if it turns cloudy it is because of a few crystals, but it never crystallises completely. The scent recalls flowers, with a hint of fruit. The taste is decidedly sweet, with a very slight acidity; the aroma is delicate, of vanilla and sugared almonds, fading quickly and leaving no aftertaste.

Linden honey

Venice lagoon honey: Linden

Light amber, with yellow-green glints when it is at its purest. Like every honey it crystallises, but linden does it slowly, and then turns ivory white. On the palate it is fresh, sweet and aromatic: it recalls mountain herbs and mint, with a lingering flavour that stays with you long after the taste.

Blackberry honey

Amber, tending to orange. It comes from the flowers of the blackberry, which grows in the wildest places, left to nature: on the edges of the salt marshes and the fields. It blooms in early summer, in June. It is very sweet; the scent is delicate, of flowers and fruit, of medium intensity.

Artisan wildflower honey from the Venice Lagoon

The lagoon’s wildflower honey is not just one: it is a season passing by. Spring, summer, autumn: with each blossoming the honey changes colour, scent and flavour. We follow them one after another, with care. Each batch is like a vintage of wine: it has its own character, but it is never identical to the year before, because the blossoms are never the same, more generous or more sparing. The wind, the tides, the weather: everything stays kept in the flavour of every drop of honey, like a small memory of the lagoon. That is why every vintage is unrepeatable. We tell the batches apart by name: M1, ML and M3.

Spring wildflower honey – batch M1

Venice lagoon wildflower honey: spring, batch M1

Light in colour, it comes from the white flowers of spring (pittosporum, viburnum and jasmine), between the end of the acacia and the start of the linden. The taste is very delicate, a good alternative to acacia; the scent is light, floral or just slightly fruity.

Lavender wildflower honey – batch ML

Photo coming soon

Golden amber, it comes from the blossoming of lavender and buckwheat, with the last linden flowers and a little purple artichoke from Sant’Erasmo, a Slow Food Presidium. The scent is that of aromatic herbs and wild flowers, with a warm malty note that comes from the buckwheat. On the palate it is bold, sweet and slightly tart, with a faintly bitter background and a lingering flavour. It crystallises over time, into fine crystals.

Autumn wildflower honey – batch M3

Venice lagoon wildflower honey: autumn, batch M3

It comes after the sea lavender, from the other blossoms of the salt marsh: sea aster, golden samphire, glasswort and seablite, with Jerusalem artichoke and ivy and a small part of the last sea lavender. Dark and bold, with a salty finish. It too crystallises, with time.
